Ventures 

We have been working together with Rigo and his coffees for 3 years. When we first met Rigo as part of a visit to his community in Salado Blanco he stood out as one of the only individuals who had an understanding of and passion for Specialty Coffee. That year, we were able to purchase a bag of his traditional washed Pacamara and share it with our guests.

Fast forward to today, we were at his farm cupping 12 of his processing experiments, discussing what had worked well and what perhaps hadn't, a huge change from first visiting and trying his one profile while he nervously awaited our thoughts. Working together and with the continuous support of Cata Export, Rigo has been able to gain knowledge and understand his product so much more, ultimately empowering him and his business.

Coffees like this semi-washed Pacamara are the result of a sustained effort to work together with our producer partners as peers, tasting together, discussing flavour profiles and farm practices so that ultimately we can share more delicious coffees with you at WatchHouse.

Colombia.

Colombia’s diverse terroir encompasses several coffee producing regions, each with its distinct microclimate and soil composition. Notable coffee regions include Huila, Nariño, Antioquia, and Cauca. These regions contribute to the wide range of flavors found in Colombian coffees.

Colombia cultivates different coffee varietals, such as Caturra, Castillo, Pink Bourbon, Typica, and Gesha to name a few. Coffee farms are often situated in the ideal altitude range of 1,200 to 1,800 MaSL, which provides coffee cherries with ample time to ripen, leading to well-balanced acidity and notable sweetness in the beans.
