Step 01. Prepare.
Using hot water, rinse the paper filter to remove any taste. Preheat your brewer.
Carefully weigh out 16g of coffee. If using beans, grind to medium.
Step 02. Bloom.
Add the ground coffee to your brewer, shaking gently to level the bed.
Pour 50g of filtered water evenly over the coffee and start your timer.
Leave to bloom for 30 seconds. This allows the coffee to degas.
Step 03. Pour.
As your timer hits 40 seconds, slowly pour in 100g of water in a circular, spiralling motion, starting from the middle and moving to the edges. Pouring in this way maintain a flat bed.
When your timer shows 1 minute and 20 seconds, pour in the remaining 100g of water using the same slow, spiralling technique.
Step 04. Drawdown.
Your brew should be ready at around the 2 minutes and 30 seconds mark.
If it’s quicker, try a finer grind next time. If it takes longer, make the grind coarser.
